Blueberry oats

Nothing better than starting the day with a steaming bowl of oats. They are filling, nutritious and super cheap. They are great for days when you need an extra energy boost or after a big workout to refuel. I love making superfoods breakfast bowls, and this one is a favourite. It's so yummy it almost tastes sinful!
 

  • 1/2 cup of oats (I use gluten free organic oats)

  • 1 cup filtered water or milk of your choice

  • a handful of fresh or frozen blueberries

  • 1/2 tbs pumpkin seeds

  • 1/2 tbs dessicated coconut

  • 1 ts linseeds

  • 1/2 ts bee pollen (optional)

  • Raw honey for drizzling

Ingredients (serves 1)

Method

Mix the oats and blueberries with the filtered water or milk in a small saucepan. Heat on the stove till simmering, reduce the heat and cook for 4-5 minutes, stirring to prevent sticking. Remove from heat and pour into a bowl. Top with the pumpkin seeds, coconut, linseeds and bee pollen. Drizzle with honey according to how sweet you like it. Enjoy the energy boost! x
