Creamy almond dressing

This might just be my absolute FAVOURITE salad dressing.....I love it so much I make a huge jar and keep it in the fridge for up to 4 days to eat with everything. It usually only lasts for 2 days! I have been known to eat it out the jar with a spoon by itself! It's so creamy and dangerously addictive.....be warned! And even better is that it adds some protein to your veg and it's totally oil free.

  • 2 cloves garlic, crushed

  • 1 tbs tamari (or soya sauce if you don't have tamari)

  • 2 tbs cider vinegar or lemon juice

  • 1/2 cup water

  • 3 tbs tahini

  • 2 tbs almond butter (cashew or peanut butter will work too)

  • 5 almonds

  • optional: 1 tbs nutritional yeast 

Ingredients (makes about 1 jar or 2 cups)

Method

Add all to the blender and blitz till smooth. Season generously with salt and pepper. Keep in an airtight jar or container in the fridge. It will thicken up while in the fridge so you can add a little water and shake it up before using.
