Mint ginger pesto

This easy zesty dressing is so yum and addictive! Glad I made a whole jar but it's not going to last very long.

  • 1 large handful mint leaves

  • 1 small handful coriander

  • 1 small handful wild rocket

  • 1 tbs pine nuts

  • Juice of 1 lemon

  • 2 cloves of garlic, peeled

  • 2 tbs virgin cold pressed olive oil

  • 1 red chilli, finely chopped

  • 1/2 tbs apple cider vinegar

  • 1.5 inch piece ginger root, peeled

  • 2 tbs nutritional yeast

  • 1 tbs filtered water

  • Good pinch of Himalayan salt

  • Pepper

Method

Place everything in the blender and whizz till smooth and all the mint and rocket is broken down. Store in the fridge for up to 3-4 days.
