Raw beetroot hummus

The raw beetroot creates a beautiful bright coloured dip and a yummy earthiness with the walnuts. It's a great way to get some of this amazing superfood into your life without having to eat a whole beetroot.  It can be made with carrot or courgette too. Always great to share with friends as part of a spread.

  • 1 large or 2 small beetroot, peeled

  • 2 tbs crushed walnuts

  • 1 clove of garlic, crushed

  • Juice of 1 lemon

  • 1 tbs chopped parsley

  • 1/2 ts cumin powder

  • 2 tb olive oil

  • Salt and pepper

  • Extra olive oil for drizzling

  • For garnishing: parsley or coriander leaves and sesame seeds

Ingredients (serves 4)


Wash, peel and coarsely grate the beetroot. Add to the blender with the rest of the ingredients and blend well. Add a splash of water or olive oil if it’s too thick. Transfer to a bowl and season well. Drizzle with olive oil and sprinkle with a few parsley/coriander leaves and sesame seeds.
