Carrot cake porridge

This is a great breakfast if you have a busy morning ahead or need workout fuel. I even eat this for lunch or dinner when I need something hearty and quick. It may seem strange to have carrots with oats, but they pair so well with cinnamon and the sweetness of the apple that it almost a tastes like carrot cake

  • 1/2 cup of gluten free and organic oats

  • 1 cup of almost milk

  • 1/2 ts cinnamon

  • 1 apple chopped roughly

  • 1 carrot grated coarsely

  • 1/2 ts finely chopped ginger

  • 1 tbs organic plain yoghurt

  • 1/2 tbs flaked almonds

  • Coconut nectar, agave or honey for drizzling

Ingredients (serves 1)

Method

Place the oats, milk, cinnamon and ginger in a small saucepan. Bring to a simmer and cook for 4-5 minutes, stirring slowly, till the oats are soft. Add a splash more almond milk and stir in.

Serve in a bowl topped with the grated carrot, chopped apple, flaked almonds, a dollop of yoghurt and a drizzle of sweetness of your choice.
