Courgetti with pesto

Spiralised Courgette makes the perfect substitute for spaghetti or noodles and adds a fresh crunchy element to the traditional pasta with pesto. This pesto is inspired by traditional pesto fused with some fragrant Asian ingredients. Enjoy the flavour feast!

  • 4 courgettes, spiralised

  • 2 tbs almond milk

  • 1 large handful mint leaves

  • 1 handful basil leaves

  • 1 large handful coriander leaves

  • 2.5 inch piece ginger root, grated

  • 1 garlic cloves, crushed

  • 1 red chilli. finely chopped

  • 1/2 cup of cashew nuts

  • 3 tbs olive oil

  • 2 tbs rice vinegar

  • 1 lemongrass stalk, finely chopped

  • 1 tbs nutritional yeast

  • 2 tbs water

  • 1 small avocado

  • 1/2 ts coconut sugar

  • Juice of and zest of 1 lime

  • Pine nuts for decorating

Method

Combine all the dressing ingredients in the blender and whizz till smooth. Dress the noodles with the pesto and sprinkle with the pine nuts just before serving. If you would prefer the noodles hot, soak in hot water for 5 minutes and warm the pesto in a saucepan.
