Liver cleanser salad

This salad is a great liver cleanser and detoxifier and helps support your body gently.  The watercress is also great for de-bloating flushing out toxins, revitalising the skin, supporting the immune system and it’s also a known hangover cure!!! It will leave you feeling energized and cleansed. It’s a must after any period of over indulging to revitalize you and leave you skin glowing.

Ingredients (serves 2 as a main course OR 4 as a side dish)


  • 2 carrots, coarsely grated

  • 1 handful of wild rocket, washed

  • 1 handful of baby spinach, washed and roughly chopped

  • 3-4 outer leaves of gem lettuce

  • 3 sprigs of coriander

  • 3 sprigs of parsley

  • 1 spring onion, finely chopped

  • 1/2 tbs grated or finely chopped ginger (peeled)

  • 2 tbs hemp seeds

Place all ingredients in a bowl and combine well. Can be kept in an airtight container for 3 days. Add the pesto just before serving.

Watercress pesto:

  • 2 large handfuls fresh watercress

  • 1 tbs pine or cashew nuts

  • 1 large clove of garlic

  • 1 tbs tahini

  • 3 tbs olive oil (preferably cold pressed virgin oil)

  • 1 tbs filtered water

  • juice of 1 lemon

  • 1 tbs nutritional yeast or grated parmesan

  • salt and pepper


Place all the ingredients in a blender and blend till smooth. Stir in the nutritional yeast or parmesan Season with salt and pepper. Can be kept in the fridge in a jar or airtight container for up to 3 days. The pesto will be quite chunky and thick. If you would prefer it a more liquid consistency add more water and a dash more oil.



The pesto can be used for marinating veg before grilling/roasting and is also great on baked salmon or in wraps/sandwiches. For variation you can add other grated veg such as beetroot, courgette or cabbage. Add an apple for a sweeter version. The herbs can be substituted with any other herbs you have in the fridge, such as basil, mint or chives. The pesto can also be made with rocket.
